Southwestern Cheesecake
2 (8oz) pkgs. Cream cheese, softened
2 cups shredded sharp cheddar cheese
2 cups sour cream, divided
1 ½ (1.25oz) pkgs. Taco seasoning
1 (4oz) can chopped green chilies
1 cup chunky salsa
¼ cup chopped cilantro or green onions
tortilla chips
Combine cream cheese and cheddar cheese in bowl
and mix until combined. Add sour cream and seasoning mix; beat. Add
eggs, one at a time, beating well after each addition. Stir in chilies.
Pour into one 9" springform pan or two 6" pans, sprayed lightly
with nonstick cooking spray. Bake at 350 degrees F for 35-40 minutes
or until center is set. Let cool 10 minutes. Spoon remaining sour cream
on top of cake. Cool slightly. Top with salsa and cilantro. Serve with
sturdy tortilla chips. (May also top with sliced black olives or shredded
cheese).
