Coconut Drops
2 ½ cups (1 7oz package) flaked sweetened coconut
2 cups unsweetened finely shredded coconut (fresh or frozen)
1 cup sugar
3 tablespoons flour
¼ teaspoon salt
4 egg whites
1 ½ tablespoons honey
1 teaspoon vanilla
Combine coconuts and mix completely, making sure
to break up any lumps and separate into flakes. In a separate bowl combine
sugar, flour and salt; add egg whites, honey and vanilla; blend until
smooth. Pour sugar and egg white mixture over coconut. STIR AND MAKE
SURE BLENDED AND MIXED COMPLETELY. Cover and chill for at least 30 minutes.
Preheat oven to 325 degrees F. Line large cookie sheet with baking parchment
or spray with vegetable spray Drop coconut mixture by rounded tablespoons
about 2 inches apart on the cookie sheet. Bake about 15-17 minutes or
until golden brown. Remove coconut drops to cool on rack.
Chocolate Drizzle
1 (60z) package semi-sweet chocolate
morsels
1 teaspoon shortening
Place chocolate and shortening in microwave proof
bowl. Microwave on high for 2-3 minutes, stirring after each minute.
Drizzle Coconut Drops with chocolate or spread on top of a drop and
press another drop on top to form a filled cookie.
Yield: about 3 dozen coconut drops.
