Oriental Chicken Slaw
1 Lb. boneless, skinless chicken, cut into Bite-sized
pieces
1 Tblsp. vegetable oil
1/4 cup teriyaki marinade, divided
3 Tblsp. lime juice
2 Tblsp. sugar
2 Tblsp. olive oil
1 (16 oz.) pckg. cole slaw mix
1/2 cup chopped green onions
1/2 cup julienne cut red pepper strips
2 tsp. sesame seeds
Combine 2 Tblsp. teriyaki marinade, lime juice, sugar
and olive oil. In large nonstick skillet heat vegetable oil. Add chicken
and cook over medium-high heat for 2-3 minutes. Add remaining 2 Tblsp.
teriyaki marinade to chicken; stir-fry until liquid is reduced and chicken
is glazed and tests done. Remove from heat. Stir teriyaki mixture into
chicken. Combine slaw, red peppers and onions into large bowl. Drain
sauce from chicken and pour over slaw; toss to mix. Top slaw with chicken;
sprinkle with sesame seed.
